Loin of Pork with an Orange Marmalade and Cinnamon Apple Glaze
This is a great recipe that is moist and savory and especially nice at harvest time.
"I substituted a homemade light sugar blackberry jam and added a bit more balsamic because I love it sooo much! Also I omitted rosemary but sprinkled garlic powder on the roast and then seared it on all sides this yitned outprior to putting on sauce" - NillagirlYield: 6 Servings Ready in 45 minutes

Loin of Pork with an Orange Marmalade and Cinnamon Apple Glaze Preparation
In a hot skillet, sear every side of the pork tenderloin. Set it into a baking pan that has been sprayed with olive oil.
In a sauce pan, reduce the glaze ingredients (marmalade, vinegar, applesauce and rosemary) for about 5 minutes. Spoon 1/3 of the glaze over the tenderloin and place in a 400 degree oven for 15 minutes. Turn the tenderloin over glaze the top and return to a 350 degree oven for 30-40 more minutes or until meat thermometer registers the thickest part of the loin at 160 degrees.
Let rest and slice. Plate the tenderloin with more of the glaze mixture drizzled on top.
Salt and pepper to taste.
