Makes a perfectly browned prime rib on the outside, and medium to medium-rare on the inside... regardless of size. You can't screw this up!
Trim off some fat on roast if necessary. Rub roast with seasonings and let stand at room temperature for 30 minutes.
Place in shallow roasting pan, fat side up. Do not cover. Roast 1 hour at 375 degrees.
Turn off oven, but leave roast in until about 45 minutes before dinner. (Leave off at least 1.5 hours, but can be more)
Prepare au jus as directed on the mix package.
45 minutes before dinner, quickly pour au jus over roast. Turn the oven back on to 375 degrees for an additional 45 minutes. NEVER OPEN THE OVEN DOOR UNTIL READY TO EAT.
I like to strain the au jus/drippings remaining in the pan to serve alongside the prime rib.
