| 1 Pork tenderloin |
| 1 canfrozen apple juice; use only one cup of water |
| 1 canchipotle peppers in adobo sauce; finely diced |
| 1 clovegarlic; minced |
| 1 cupwycliff champagne or a sweet champagne |
| Pinchsalt and pepper |
| PinchDried basil |
Pork loin with a champagne, apple juice, chipotle chile marinade Preparation
combine all of the wet ingredients and the diced chipotle peppers and minced garlic in marinating dish. Salt and pepper the pork loin rub down sprinkle with basil. Heat browning pan with evoo.......brown pork tenderloin to taste I tend to brown the fatty side alot more almost a char so tastey. Place back in marinade add half cup water place in preheated oven at about 250 until cooked properly... Let rest for at least 10 minutes before slicing. While resting reduce marinade add salt and use as a sauce foe topping the pork loin... More for show rather than taste.
Notes
Pay attentiont to your internal temp. Don't over cook it will rise about 10 degrees after you take it out of the oven.
