Bold blue cheese and pepper flavors

| 6 ounces Roquefort bleu cheese; crumbled |
| 1 stick unsalted butter; softened |
| 1/4 cupplus 1 tablespoon walnuts; coarsely; chopped |
| 2 teaspoonscoarsely ground black pepper |
| baguette; toasts or crackers |
Roquefort Terrine Preparation
Puree half of cheese with butter in a food processor or electric mixer.
Transfer puree to a bowl and fold in remaining cheese, 1/4 cup walnuts, and
pepper.
Spoon into a small crock and smooth top. Chill, covered, at least 2 hours
to allow flavors to blend.
Before serving, let terrine soften about 30 minutes, then sprinkle top with
remaining walnuts.
Notes
You can make this 3 days ahead and store in the refrigerator, covered.
