This is the recipie my grandfather use to use for frying fish he would catch while fishing in cape cod. Alfred passed away last year, but his recipies live on.

Ingredients

Original recipe makes 4 Servings
1 lbfish (cod, flounder, catfish etc..); Cut into strips
1 cupcorn meal
1/2 cupjiffy mix
1/2 cupsugar
1 Tbsppepper
1/2 Tbspsalt
1 canCrisco Vegetable Shortening
2 Eggs

Big Al's Fish Fry Preparation

Cut the fish into strips.

In small bowl mix eggs.

In large ziplock mix corn meal, jiffy mix, sugar, pepper and salt (salt and pepper to taste..big Al loved lots of pepper).

In pot or fryer, dump small can of crisco vegetable shortening and heat to 400 degrees (water will sizzle on top when drizzled on it).

Note: You can strain the oil when you are finished and put it back in the can. Mark the word "fish" on the lid so you know what it was used for).

Dunk each piece of fish into egg, then put one or two pieces at a time in the ziplock and shake until fully coated. Do this until all fish is coated.

One at a time put the fish into the heated shortening, and fry until brown (about 3 minutes each).

Let cool, enjoy.
