Incredibly light and moist, these waffles melt in your mouth, and are so scrumptious you could serve them for dessert. We love them topped with butter, real maple syrup and a little bit of jam or fruit. Best of all, they can be reheated in the toaster or microwave, so go ahead and make plenty.
In a large bowl, mix flour, sugar, yeast and salt.
Melt the butter in the microwave. In a medium glass bowl, heat the vanilla, milk and the heavy cream in the microwave (about 3 minutes; needs to be 120 to 130F to activate yeast), whisk in the eggs and melted butter.
Add milk mixture to dry ingredients, mixing just until large lumps disappear. Do not over mix or waffles will be heavy and dense, instead of light and moist. Makes about 4 1/2 cups batter.
Cover; let rise in a warm, draft-free location 1 hour or until bubbly. Or cover and refrigerate batter overnight.
Stir down batter. Lightly spray hot waffle maker with olive oil or butter spray. Pour batter, being careful not to overfill waffle grid. Use a spoon to spread batter evenly in the waffle grid.
Prior to serving, keep waffles hot and crisp by placing on a rack in a preheated 200 F oven. Putting them on a rack prevents steam from building up on the bottom side of the waffles.
Waffles freeze very well - after making, cool completely on a rack, then place in a zip-lock bag with wax paper between them. Reheat in toaster or oven for crisper waffles, reheat in the microwave for more moist results.
