An easy and delicious sure thing original recipe to please all.

A shredded chicken smothered in a creamy salsa sauce served over rice.

"I was worried that using fat free cream cheese would make it bland but the salsa had so much flavor that it was PERFECTLY balanced! I only made a pound of chicken with a 16oz. jar of salsa and 6oz. of fat free cream cheese since there is no way I could consume 4 pound of chicken! Two servings of it are currently in my freezer... 4 poundsFrozen Boneless Chicken Breast or tenders
1 24 oz jarTostitos mild chunky salsa
1 8 ozCream Cheese

Susan's Slow Cooker Salsa Chicken Preparation

Place frozen chicken in a medium to large crock pot.

Pour the salsa over the chicken.

Put the lid on the crock pot and set the crock pot to low for 4-5 hours based on your crock pot.

You want the chicken to be cooked through and very tender so at the end of cooking time it easily pulls apart with 2 forks.

I do this right in the crock pot when I use chicken tenders, Breasts can be taken out and shredded on a plate and then returned to the crock pot. (Shredding the chicken ensures the great flavor in every bite!)

Last- I then melt the cream cheese into the chicken and salsa mixture.

Serve over rice with a side of fresh Red pepper slices.

Notes

We have found that even though we love a variety of salsa brands Tostitos works by far the best for this recipe!

I am a wimp when it come to medium and hot salsa. My family is not but they still LOVE this dish! You of corse can try mild or hot Tostitos salsa.

I make this meal for friends when they have a baby, or after surgery etc, since it is a sure thing their families all love and 1/2 can feed my family and the other 1/2 theirs! Or we love the left overs!

This was the easiest thing ever. I made it the first day and served it over rice. On day 2 the left overs were amazing on top of baked potatoes, and on day three (yes, 3 meals), my husband enjoyed the chicken on flour tortias. So many uses for such a simple dish. It is now a staple in my kitchen!!

This was very bland. Perhaps it would be better with a hotter salsa and/or topped with hot sauce and salt. This recipe was disappointing.

I only used half the cream cheese to keep calories down. I added peppers and onions to the chicken and salsa. Then at the end I added corn and black beans. We ate this inside tortillas. Yummy!

My husband and I loved this dish but we thought it would be better for a dip with tortilla chips instead of a dinner. It's SO tasty and easy to make...it would be great for football Saturdays!!

Super good! Made enchilada style. I added the rice to the mixture and also black beans, hot sauce, salt, pepper, garlic and cumin. Place a scoop of chicken mixture in each center of corn tortillas. Put in 9x13 and add cheese to top. Bake in 375 oven until heated through. MMMmmm!
