Susan's Slow Cooker Salsa Chicken Preparation

Place frozen chicken in a medium to large crock pot.

Pour the salsa over the chicken.

Put the lid on the crock pot and set the crock pot to low for 4-5 hours based on your crock pot.

You want the chicken to be cooked through and very tender so at the end of cooking time it easily pulls apart with 2 forks.

I do this right in the crock pot when I use chicken tenders, Breasts can be taken out and shredded on a plate and then returned to the crock pot. (Shredding the chicken ensures the great flavor in every bite!)

Last- I then melt the cream cheese into the chicken and salsa mixture.

Serve over rice with a side of fresh Red pepper slices.

Notes

We have found that even though we love a variety of salsa brands Tostitos works by far the best for this recipe!

I am a wimp when it come to medium and hot salsa. My family is not but they still LOVE this dish! You of corse can try mild or hot Tostitos salsa.

I make this meal for friends when they have a baby, or after surgery etc, since it is a sure thing their families all love and 1/2 can feed my family and the other 1/2 theirs! Or we love the left overs!

This is my original recipe =D

Enjoy!

We have made this several times. At first I was unsure but it was a huge hit! Added a can of corn and black beans at the end.

Super easy and much tastier than I expected!

Used black beans, corn and frozen chicken breasts and Santa Fe Creme (Philadelphia cream cheese). Will eat the leftovers on tortilla chips and cheese. Not big rice fans. Very easy in the crockpot.

This was so good! I tasted it before adding cream cheese and then after adding cream cheese. Both ways this is wonderful. Thanx!

Really good stuff. Great leftovers. I used the Santa Fe cooking cream cheese and it added more flavor

This was absolutely delicious and super easy. I added kidney beans and a small can of corn. Instead of cream cheese, I added sour cream to taste. So good!

I read the other reviews and added the black beans and corn. We loved it and it was so easy! Thanks

Great recipe. I skip the cream cheese and add 1-2 cans black beans and a bag of frozen white corn. Yummy with warm tortillas or with melted cheese in a quesadilla!

Simple and yummy. My kids loved it too!!

I was worried that using fat free cream cheese would make it bland but the salsa had so much flavor that it was PERFECTLY balanced! I only made a pound of chicken with a 16oz. jar of salsa and 6oz. of fat free cream cheese since there is no way I could consume 4 pound of chicken! Two servings of it are currently in my freezer... I will be interested to see how it tastes after being defrosted! Great flavor + inexpensive due to few ingredients + healthy = THANK YOU for this TERRIFIC recipe!

This was so easy and very yummy! I added a few seasonings and a tad bit of water and served on brown rice or baked potato with sour cream and cheese.

Yum! This is an excellent make ahead dinner. Easy, delicious & nutritious. I added corn, black beans and used fat free cream cheese. Will make again for sure!

What does it mean by adding the cream cheese lastly? Not in the slowcooker at all?

thought this dish tasted like a sandwich filler. It was too rich for us.

Fantastic! All four family members loved it (and this is rare!). I used two lbs chicken breasts and added a can of black beans and some frozen corn.

I added black beans, corn, taco seasoning which it doesn't really need. I only had a lb and a half of chicken which didn't seem like alot so I add two cans of chicken breasts which wasn't necessary when I shredded the chicken. It turned out like chili almost. We dipped tortilla chips in it.
