Original recipe makes 6 Servings
6 slicesBacon; chopped
1 Onion; chopped
1/2 largeGreen Pepper; chopped
2 clovesGarlic; minced
5 1/2 poundGround Beef
1 can(28oz)Tomato; chopped
1 tablespoonChilli [powder
Salt and Pepper
1 cupSweet Corn
1 cupKidney beans
2 cupPotatoes (peeled); diced

Mexican Ground Beef Preparation

Fry bacon until crisp. Drain and set aside.

Saute onion, green pepper and garlic in bacon drippings.

Add ground beef and cook until browned. Lower heat and add tomatoes and juice, salt and pepper, chili powder. corn, beans and potatoes.

Cook for 45 minutes or until potatoes are tender.

When ready to serve, crumble bacon over top.
