Makes 3
Dissolve yeast in warm water (100-110) add 2 tsp sugar and let sit 10 minutes until foamy.
Mix flour, sugar & salt, set aside.
Add boiling water to oil, than add cold water.
Beat eggs. Add water/oil mixture. Add yeast, than flour, salt & sugar.
Knead 10 minutes. Add more flour if necessary.
Put dough in oiled bowl and cover with towel. Place in a warm place and let rise for 1 hour or until double in size.
Punch dough down, knead, and divide in three.
Each third will make 1 challah. Divide again into three and roll into lengths to make a braid or other shape and let rise for 45 minutes. Brush with egg wash and sprinkle with seeds if desired.
Bake 350-375 @ 40 minutes.
