Italian Wedding Soup
This is a lovely chicken broth based soup that is great on a rainy day or great as appetizer for a dinner party.

|2 TablespoonsOlive Oil|
|6 Green Onions; chopped|
|2 Carrots; diced|
|3 stalksCelery; chopped|
|2 teaspoonsMinced Garlic|
|1 TablespoonItalian Herbs|
|2 cartonsChicken Broth|
|1 boxSpinach; thawed and juice squeezed out|
|1 CupAcini Pasta|
|1 lb.Italian Sausage|
|1/2 CupParmesan Cheese; shredded|
|3/4 CupItalian seasoned Bread Crumbs|
Italian Wedding Soup Preparation
Combine sausage, egg, parmasan cheese and bread crumbs and roll into 1" meatballs. Brown in skillet and set aside. In stock pot, saute onion, celery, carrots, italian herbs and garlic in 2 tablespoons of olive oil. Add chicken broth and cook for 10 minutes. Add pasta and cook for seven minutes. Add spinach and cook further for 5 minutes.
May want to serve with shredded parmesan cheese on top.
