This is a lovely chicken broth based soup that is great on a rainy day or great as appetizer for a dinner party.

2 Tablespoons Olive Oil
6 Green Onions; chopped
2 Carrots; diced
3 stalks Celery; chopped
2 teaspoons Minced Garlic
1 Tablespoon Italian Herbs
2 cartons Chicken Broth
1 box Spinach; thawed and juice squeezed out
1 Cup Acini Pasta
1 lb. Italian Sausage
1/2 Cup Parmesan Cheese; shredded
1 Egg
3/4 Cup Italian seasoned Bread Crumbs

Original recipe makes Servings



Combine sausage, egg, parmasan cheese and bread crumbs and roll into 1" meatballs. Brown in skillet and set aside. In stock pot, saute onion, celery, carrots, italian herbs and garlic in 2 tablespoons of olive oil. Add chicken broth and cook for 10 minutes. Add pasta and cook for seven minutes. Add spinach and cook further for 5 minutes.


May want to serve with shredded parmesan cheese on top.
