| 1 bagBaby Spinach; (5 cups) |
| 1 cupFeta Cheese; crumbled |
| 1 TablespoonExtra Virgin Olive Oil |
| 1 teaspoonLemon Rind; grated |
| 1 TablespoonFresh Lemon Juice |
| 1/2 teaspoonSalt |
Spinach Salad with Orzo and Feta Preparation
Bring water to a boil in a medium sauce pan. Add orzo. Cook 10 minutes; drain. Rinse with cold water; drain.
Combine pasta, spinach and feta in a large bowl. Combine oil and remaining ingredients in a small bowl. Drizzle lemon mixture over pasta mixture; toss well to coat. Serve immediately after adding lemon mixture.

Notes
If you put the lemon mixture on the night before and refrigerate, the orzo absorbs it all and the salad is drier....we prefer it when the mixture is added just before serving. This is best chilled.
