Stewed Tomatoes and Onions
Original recipe makes 6 Servings
| 1/2 cupgreen bell pepper; chopped |
| 1/4 cupcelery; thinly sliced |
| 1 1smallonion; chopped |
| 1 clovegarlic; minced |
| 3 cupstomatoes; peeled and chopped |
| 1 tablespoonred wine vinegar |
| 1/8 teaspoonground black pepper |
Stewed Tomatoes and Onions Preparation
Directions
Coat a large nonstick skillet with cooking spray. Place over medium-high heat until hot. Add the bell pepper, celery, onion, and garlic. Saute for 5 minutes or until the vegetables are tender. Add the tomatoes, vinegar and black pepper.
Bring to a boil. Cover, reduce the heat, and simmer for 15 minutes, stirring occasionally.
