Cook the 2 cups of white rice and set aside. Clean and devein the shrimp, rinse in cold water and set aside.
In a large frying pan, melt the 5 tablespoons of butter, then add the 1/2 teaspoon crushed garlic along with the 1 pound of large cleaned shrimp. Cook the shrimp until the shrimp turns a milky white and reddish color. Do not over cook the shrimp.
After the shrimp is cooked, then add the 1/4 cup seasoned bread crumbs and stir well. Divide the rice into 2 portions and then pour the shrimp scampi mixture over the 2 portions for a wonderful Shrimp Scampi dinner for two. Preparation time: 25 minutes.
