Original recipe makes 12 Servings
1 1/2 cupsall-purpose flour
2/3 cupsugar
1 1/2 teaspoonsbaking powder
1/4 teaspoonbaking soda
1/4 teaspoonsalt
3/4 cupregular oats
1 cupmashed bananas,; about 2 large
1/3 cuplow-fat buttermilk
1/4 cupvegetable oil
1 teaspoonvanilla extract
2 largeEggs; lightly beaten

Banana-Oatmeal Loaf (4 Pts) Preparation

Preheat oven to 350 degrees.

Lightly spoon flour into dry measuring cups; level with a knife. Combine

flour and the next 4 ingredients (through salt) in a large bowl; stirring

well with a whisk. Stir in oats.

Combine mashed banana, buttermilk, oil, vanilla, and eggs; add to flour

mixture. Stir until just moist.

Spoon batter into a 8x4-inch loaf pan coated with cooking spray.

Bake at 350 degrees for 55 minutes, or until a wooden pick inserted in

center comes out clean.

Cool 15 minutes in pan on a wire rack; remove from pan. Cool completely on

a wire rack.
