My shrimp ceviche. Tried and true recipe from cook at Puerto Vallarta Resort. Simple and tasty!!

Original recipe makes 16 Servings
3 lbsmedium shrimp; cleaned and chopped small
6 mediumlimes; juiced
4 mediumlemons; juiced
1 cupcilantro leaves; chopped
1 smallred onion; diced
1/2 smallcucumber; peeled and diced no seeds
3 smallVine ripe tomatoes; diced

Memo's Shrimp Ceviche Preparation

Lay out shrimp in bottom of glass baking dish. pour lemon and lime juices over them cover and refrigerate for 3 hours. juice will "cook" the shrimp.

Toss with remaining ingredients and refrigerate another 2 hours.

Sea or kosher salt and pepper to taste

Enjoy with tostaditas (chips).

Very easy and delicious. Not much to it, but that's what I liked about it. I didn't set the shrimp in the juices for 3 hours, and it still turned out just fine. Thanks.
