Bosch Recipe
in the Bosch mixing bowl, combine water, oil, honey and lecithin. Next add 2 2/3 cups of flour. Don't mix.
On top of the flour, add dough enhancer, gluten, and yeast (no salt yet). Joy mixture in using the quick switch so flour doesn't rise out of the mixing bowl. Then on speed 1 (low) until smooth. Let stand for 10 minutes or until rises about double. Mixture will look like a sponge.
Add additional flour and salt. Add it slowly as to not over-flour. Run the mixer (knead) for 8 minutes or until dough cleans the side of the bowl.
Shape into loaves and put into greased pans to rise, about 1 hour. To test to see if it is risen all the way, poke finger in. If the indentation stays or comes back very slowly, it is ready to bake.. If it comes back quickly, let it rise longer.
Put into a cool (not pre-heated) oven and set at 350 degrees for 35 minutes. Remove and take out of pan or it will get soggy. Cool on racks before putting in plastic bread bags. Got this from Justine Simpson
