| 1 cupWhole wheat pastry flour |
| 1 teaspoonBaking soda |
| 1 teaspoonBaking powder |
| 1/4 teaspoonSalt |
| 3/4 cupBrown sugar |
| 1/4 cupCanola Oil |
| 2 eaEgg |
| 1 1/2 cupBananas, mashed |
| 1 teaspoonVanilla |
| 3 tablespoonsCoconut |

Banana chocolate muffins Preparation
Preheat oven to 400 deg F. Spray a muffin pan with cooking spray.
In a small bowl, mix the two flours, baking soda, baking powder, salt.
In a large bowl,mix brown sugar and oil, add eggs (one at a time) and stir until smooth (crush any sugar lumps). Whisk in the bananas and vanilla. Stir in half the flour mixture, half the buttermilk, then the rest of the flour and the buttermilk. Stir until wet ingredient are moisten but not too long. Stir in the chocolate chips.
Pour the batter into the pan using an ice cream scoop (about 2 scoops per muffin cup). Top with about 1/2 tsp of coconut and press it gently on top of the batter so it will stick.
Bake for 20 minutes. Remove from the oven and let cool for 15 minutes then unmold the muffins and let cool completely.
