This is a twist on your standard Potato Kale Chowder, made for dieters.

"Great recipe. To add even more protein and spice, I substituted Aduki Beans and added a little salt, pinch of pepper flakes, 1T of vinegar and a splash of Sriracha Sauce. This will my winter delight on cold, cloudy days." - lhester526

Original recipe makes 6 Servings
2 wholepotatoes, golden; diced, w/skin
1/2 cuponion; diced
1 tspgarlic powder
1/2 tspthyme
1 tsporegano
5 cupschicken broth; low sodium
14 oztomatoes; diced, can, no salt
15 ozkidney beans, white; can, rinsed
5 cupskale; chopped

Kale & Potato Soup Preparation

Add all items except kale to large soup pot. Bring to a boil and reduce to a simmer.

Cook until potatoes are almost done (about 20 minutes) and add kale.

Continue cooking for 10 minutes.

Serve in soup bowl.

    Very good soup and very versatile. Used sweet potatoes to add color and more nutrition. Used pintos since I didn't have kidney beans. Will make it again for sure.
