Kale & Potato Soup

This is a twist on your standard Potato Kale Chowder, made for dieters.

"Great recipe. To add even more protein and spice, I substituted Aduki Beans and added a little salt, pinch of pepper flakes, 1T of vinegar and a splash of Sriracha Sauce. This will my winter delight on cold, cloudy days."

Ingredients

Are you making this? 
2 whole potatoes, golden; diced, w/skin
1/2 cup onion; diced
1 tsp garlic powder
1/2 tsp thyme
1 tsp oregano
5 cups chicken broth; low sodium
14 oz tomatoes; diced, can, no salt
15 oz kidney beans, white; can, rinsed
5 cups kale; chopped

Original recipe makes 6 Servings

Servings  

Preparation

Add all items except kale to large soup pot. Bring to a boil and reduce to a simmer.

Cook until potatoes are almost done (about 20 minutes) and add kale.

Continue cooking for 10 minutes.

Serve in soup bowl.

Bland as written. I get that it's healthy food, but healthy can taste more flavorful. If I made this again I would triple the (fresh!) garlic and spices, add Worcestershire, & maybe a can of V8 or tomato sauce.

Very good soup and very versatile. Used sweet potatoes to add color and more nutrition. Used pintos since I didn't have kidney beans. Will make it again for sure.

What a GREAT use for KALE! This recipe was very easy, and the soup is good. I used the precut and bagged kale with the stems, and the crunch was GREAT!
