Chicken and Black Bean-Stuffed Burritos

A healthy quick weeknight meal. I buy a roasted chicken from the grocery store and make this with the leftovers.

Original recipe makes 4 Servings
1/4 cupwater
2 tablespoonslime juice
1/2 teaspoonchili powder
1/4 teaspoonground cumin
1/4 teaspoonblack pepper
1/8 teaspoonground red pepper
2 cupschicken breast; shredded
1/4 cupsliced onions
3/4 cupcanned black beans; drained
1/2 cupsalsa
4 flour tortillas
1/2 cupjack cheese; shredded

Chicken and Black Bean-Stuffed Burritos Preparation

Bring first 6 ingredients to a boil in a saucepan. Stir in shredded chicken and green onions.

Combine beans and salsa. Spoon 1/4 cup bean mixter and 1/2 cup chicken mixture down center of each tortilla; sprinkle with 2 tablespoons cheese. Roll up.

Optional:

Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add 2 burritos. Place a cast-iron or other heavy skillet on top and cook for 3 minutes on each side. Repeat with remaining 2 burritos.

    These are great reheated as well! Had one leftover from last night so reheated in micro for lunch today. Still good. Will make a double batch next time.

    Excellent! Served w a side of shredded lettuce, cheese, sour cream & guacamole. Yummy & so easy. My 13 yr old feels confident that she can make this on her own next time. We did bake @350 for 10 min nice
