Hot and tasty homemade Focaccia bread with herbs, Parmesan and mozzarella cheese.

Original recipe makes 8 Servings
2 3/4 Cupsall purpose flour
1 teaspoonsalt
1 teaspoonwhite sugar
1 tablespoonactive dry yeast
1 teaspoongarlic powder
1 teaspoondried oregano
1 teaspoondried thyme
1/2 teaspoondried basil
1 pinchground black pepper
1 tablespoonvegetable oil
1 cupwarm water
2 tablespoonsolive oil
1 tablespoonGrated Parmesan cheese
1 cupmozzarella cheese
1-2 sprigsfresh Rosemary; (optional)

Rosemary Herb Focaccia Bread Preparation

Directions;

1. In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water

2. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic. Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place for twenty minutes.

3. Preheat oven 450(F) degrees (230 degrees C) Punch down, place on greased cookie sheet. Pat down 1/2 in. thick into triangle or round. Brush with olive oil, then mix together Rosemary, pares an and mozzarella and spread on top.

4. Bake 15 minutes in preheated oven or until golden brown. Serve warm,

Notes

Don't over brown.

    First time to make Focaccia. It's pretty much foolproof. My herbs must be very strong because they were overpowering. Will definitely try again, tinkering with the herb mix.

    This bread is good. It wasn't as springy as I'd imagined it would be. It also makes your house smell like an Italian bakery when it's in the oven. :)
