Ingredients

2 3/4 Cups all purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon active dry yeast
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried basil
1 pinch ground black pepper
1 tablespoon vegetable oil
1 cup warm water
2 tablespoons olive oil
1 tablespoon Grated Parmesan cheese
1 cup mozzarella cheese
1-2 sprigs fresh Rosemary; (optional)

Preparation

Directions;

1. In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water

2. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic. Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place for twenty minutes.

3. Preheat oven 450(F) degrees (230 degrees C) Punch down, place on greased cookie sheet. Pat down 1/2 in. thick into triangle or round. Brush with olive oil, then mix together Rosemary, pares an and mozzarella and spread on top.

4. Bake 15 minutes in preheated oven or until golden brown. Serve warm,

Notes

Don't over brown.

There's a difference of opinion about this recipe in my house. I thought the boxed spices made it taste a little strange and it was not my favorite. However, my honey loved this bread and has requested I make it again. When I do I am going to use fresh spices to see if that helps and will post another review!

I made this bread a few weeks ago. It turned out very moist and was a hit with some members of my household. For my part however I was disappointed. I think my problem was just that the bread tasted like all of its flavor came out of a spice bar and lacked a freshness. I think this could easily be correctly with fresh spices instead of jarred and plan to try it again at some point. I would reduce the spices by half if I used the jar spices in the future.

I've never made bread without a machine. This is easy, smells amazing, and is sooooooooo good. I want to make it all the time!! Go make some NOW.

First time to make Focaccia. It's pretty much foolproof. My herbs must be very strong because they were overpowering. Will definitely try again, tinkering with the herb mix.

Knead dough for 10 minutes in an electric mixer and let rise till double. Delicious.

This bread is good. It wasn't as springy as I'd imagined it would be. It also makes your house smell like an Italian bakery when it's in the oven. :)
