| 1 LargeSweet Yellow Onion; Chopped |
| 4 ClovesGarlic; minced |
| 2 32ozBeef Broth |
| 1 CupMerlot Wine |
| 2 28ozCans Tomatoes in juice; Chop to small pieces |
| 1 12ozTomatoe Paste |
| 1 LargeCarrot; Sliced or Chopped |
| 2 StalksCelery; Sliced or Chopped |
| 2 tablespoonsDried or Fresh Basil |
| 2 CupsZucchini; Sliced or Chopped |
| 1 38 ozFresh Cheese Tortellini |
| .25 CupFresh Italian Parsley; Chopped |
| Fresh Parmesan Cheese; Graded |
Sweet Italian Sausage and Tortellini Soup Preparation
In a large Soup pot cook the Italian Sausage (remove the castings) leaving pretty large chunks. Once brown, remove the sausage and set aside.
In the drippings from the sausage brown the Onions and garlic.
Add the beef broth and all the rest of the ingredients except the tortellini. Bring to a boil and simmer uncovered for 50 minutes.
Remove any floating oil if present.
Add the Tortellini and cook for 10 minutes.
Serve with some freshly graded Parmesan cheese on the top.
