2 poundschicken breast; (4) 8 ounce halfs, Boneless, skinless
1/2 stickButter
1/4 cupFlour
3/4 cupChicken broth
1/2 cupMilk
4 ouncesFeta cheese; crumbled
1 teaspoonSalt
1 cupSpinach; chopped
1/4 cupRed bell pepper; diced

Chicken with Feta Spinach Sauce Preparation

- Season the chicken breasts with paprika, salt, pepper & cayenne pepper

- Bake at 325 fro 30 minutes or until done.

- Meanwhile melt the butter in a saucepan over med heat.

- Add the flour.

- Add broth and whip the mixture well using a whisk.

- Add milk and whisk.

- Add salt & feta cheese bring to boil reduce heat and simmer 15 minutes, stirring frequently.

- Stir in the chopped spinach and red peppers

- Simmer another 15 minutes.

- (Optional) serve chicken over wild rice

- top with sauce

My roommates and I enjoyed this very much! I did add more milk and mushrooms to the sauce. And instead of cayenne pepper, used Cajun seasoning! Still very delicious! Definitely making again!

This ones a keeper. I used fresh spinach from the garden, reduced the salt and amount of butter in the sauce, but pan fried chicken leg fillets. Was yum.

It turned out great! Even my picky eater kids liked it. I did add extra chicken broth, approx. 1/2 cup more, to the sauce. I also added onions and garlic in the butter first before making the sauce. It was great over the rice. Thanks!

My hubby and kids loved this sauce! Found it a little salty so will omit salt next time. Also added a bit of garlic powder. Increased red pepper and spinach also. Also needed to thin with some broth. Delicious!!!

This was far better than I ever imagined! I also had to add a little extra chicken broth, but it was perfect. Had enough sauce left over to be adding to fettuccini tomorrow night.
