Original recipe makes 2 Servings
1 zucchini; spiralized
1 cupbroccoli florets; chopped
1 cupblack olives; sliced
1/2 cupsundried tomatoes; chopped
3 shitake mushrooms; sliced
1 TablespoonBalsamic vinegar
1 Tablespoonbasil
1 Tablespoonoregano
olive oil
salt and pepper
1/2 avocado; sliced thinly

Italian Spring Primavera Preparation

If you have one of those handy kitchen gadgets known as a Spiralizer you will use it to make faux pasta from the zucchini. In the event that you don’t have one, you can grate or finely peel the zucchini lengthwise as a suitable substitute. Place zucchini ‘noodles’ in serving bowl.

Add all remaining ingredients, drizzle with olive oil, toss well and season to taste. Garnish with avocado slices and a few chunks of red pepper.

Notes

You can experiment and substitute if you don't happen to have the exact ingredients on hand. Have fun; the possibilities are endless!
