Being single, it's so hard to find recipes made for one, so I'll start posting some, beginning with this one...my favorite low calorie dinner.

Ingredients
Bachelor Chow - Rotisserie Cornish Hen, Potatoes, Broccoli & Carrot Dinner Preparation
In a small bowl, mix together the spices. You will have some left over for next time.
Rub the hen with olive oil inside and out and then rub the spices on the hen, again inside and out and refrigerate for an hour.
Place the Cornish hen on the rotisserie rod and put it in the oven (I use a George Foreman "Baby George" rotisserie oven I bought at a yard sale for $5. Set the timer for 45 minutes.
While the hen is cooking, prepare the vegetables and place into a medium size pot with the water. Bring to a boil then reduce the heat to as low as you can and cover the pot. Simmer until the chicken is done. Spray on as much calorie/fat free butter spray as you like.
You will probably have enough Cornish hen left over for a chicken salad sandwich for lunch the next day.
Notes
Keep a check on the vegetables as they simmer and add more water as needed.
