The chipotle gives the sauce a little zing.
Put the garlic in a small food processor and chop completely. Add the mayonnaise and chipotle, then process until the sauce is smooth and creamy. Remove to a small serving bowl and refrigerate,
Preheat the oven to 400. Put the fries on a cookie sheet in a single layer. Drizzle with olive oil and crack salt lightly over potatoes. Use your hand to mix them up so they all have a little salt and oil on them.
Place in the preheated oven and bake until they are done - they should be slighly crisp and a little darker.
Serve with the mayonnaise.
