To shred chicken, start with leftover or freshly cooked chicken that is cooled, skinned, and boned. Using a fork, pull the meat apart into long shreds.

| 2/3 cupbread crumbs |
| 1 largeegg; lightly beaten |
| 1 egg white |
| 1 smallyellow onion; minced (about 1/2 cup) |
| 1 mediumcelery stalk; chopped |
| 2 tablespoonschili sauce |
| 1 tablespoonpickapepper sauce |
| 1 tablespoonhot red pepper sauce |
| 1/2 teaspoonsalt |
| 1/2 teaspoonfreshly ground black pepper |
Spicy Chicken Patties Preparation
1. In a medium bowl, combine chicken, bread crumbs, egg, egg white, onion, celery, chili sauce, pickapepper sauce, red pepper sauce, salt, and pepper. Mix well.
2 Shape chicken mixture into 7 small patties. Place patties on a baking sheet; cover with plastic wrap and chill for 30 minutes.
Spray a large skillet with vegetable cooking spray. Cook patties over medium heat, turning once, until golden brown, about 10 minutes. Serve immediately.
Notes
Pickapepper sauce is a zesty condiment made from pureed red chilies, vinegar, and seasonings. You'll find it in the supermarket condiment section.
