To shred chicken, start with leftover or freshly cooked chicken that is cooled, skinned, and boned. Using a fork, pull the meat apart into long shreds.

Original recipe makes 7 Servings
2 cupscooked shredded chicken
2/3 cupbread crumbs
1 largeegg; lightly beaten
1 egg white
1 smallyellow onion; minced (about 1/2 cup)
1 mediumcelery stalk; chopped
2 tablespoonschili sauce
1 tablespoonpickapepper sauce
1 tablespoonhot red pepper sauce
1/2 teaspoonsalt
1/2 teaspoonfreshly ground black pepper

Spicy Chicken Patties Preparation

1. In a medium bowl, combine chicken, bread crumbs, egg, egg white, onion, celery, chili sauce, pickapepper sauce, red pepper sauce, salt, and pepper. Mix well.

2 Shape chicken mixture into 7 small patties. Place patties on a baking sheet; cover with plastic wrap and chill for 30 minutes.

Spray a large skillet with vegetable cooking spray. Cook patties over medium heat, turning once, until golden brown, about 10 minutes. Serve immediately.

Notes

Pickapepper sauce is a zesty condiment made from pureed red chilies, vinegar, and seasonings. You'll find it in the supermarket condiment section.
