Ingredients

5 Tablespoons Butter
1 Green Pepper; chopped
1 Red Pepper; chopped
6-7 Green Onion; Sliced
2 1/2 Tablespoons Flour
1 cup Milk
1 jar Queso Cheese Dip
1 can Diced Tomatoes with Green Chilies
1 can corn
1 can pinto beans
1 can black beans
1 large carton (32 oz) Chicken Broth
1 packet Taco Seasoning
1 Rotisserie Chicken; deboned and cubed
Salt and Pepper; to taste
dash Garlic Salt
Fresh Cilantro; chopped finely

Preparation

Melt butter in large soup pan and add onion, red pepper and green pepper. Alternate adding some of the flour and milk and stir. Do this repeated ontil the mixture has absorbed the flour and is smooth. Add the remaining ingredients. Add chicken broth to thin the soup to your desire consistency. Simmer for 15 minutes.

May serve with nacho chips and sour cream.

Notes

If you want your soup to be brighter in color, double the amount of pinto beans and leave the black beans out as they dull the soup color.
