2 Egg white
200 gramSweetened Coconut; chopped
1 teaspoonSugar
6 ounceSemisweet chocolate; chopped
1/2 cupHeavy cream
1 tablespoonVanilla

Mini Coconut Chocolate Tarts Preparation

Preheat oven to 350F (180C).

In a small sauce pan add cream, vanilla and chocolate. Melt slowly over medium low heat stirring occationally.

Lightly whisk egg whites and sugar for a minute or so, add coconut and mix well.

Grease mini muffin pan with butter or oil spray. Press one tablespoon of coconut mixture into mini muffin pan forming a thin cup to the top of the muffin pan. Cook for 7 or 8 minutes until sides are light golden brown then allow to cool down to room temperature in muffin pan.

Fill each coconut cup with chocolate and refrigerate for 2 hours still in muffin pan. Carefully remove from muffin pan by using a knife to release outter coconut from pan.

As an alternate of semisweet chocolate, you can use Toblerone chocolate.

They tasted wonderful!! I had problems with cooking the coconut cups. I cooked them 10 min and I thought the tops were going to burn but the rest of the cup wasn't cooked enough. Does anyone have any suggestions? They still tasted good.

This isn't a very well-put recipe, Patdehkittycat18. The way it's written it does seem like the first 2 lines are to just make the filling, but no. The 2nd sentence is actually meant to be how to make the cups. This is how it should read:

Cups: Lightly whisk egg whites and sugar for a minute or so, add coconut and mix well.

(Two extra words really make a difference, no? ;)

This recipe came out exactly like the photo did. I even calculated the calorie count per tart (275 calories). Great recipe.
