Cheesecake Filled Cupcakes
These wonderful cupcakes combine chocolate cake with chocolate chip cheesecake. They have been in our family for years and are always a BIG hit when brought to a function!

|1 1/2 cupflour|
|1 cupsugar, granulated|
|1/4 cupunsweetened cocoa|
|1 tspbaking soda|
|1/3 cupcooking oil (canola or veg)|
|8 ouncescream cheese; May use "light" but "fat-free" not recommended|
|1/3 cupsugar, granulated|
|1 wholeegg; May use 2 large whites for lighter texture in cheesecake|
|6 ounceschocolate chips|
Cheesecake Filled Cupcakes Preparation
Mix first nine ingredients by hand or with electric mixer until well blended.
Pour into cupcake cups, only 1/3 to 1/2 full.
For Cheesecake Filling:
Cream together the cream cheese and sugar. Then add egg or whites, salt.
Fold in chocolate chips.
Scoop into cupcake cups on top of cake batter, approximately 1 Tbsp of filling for ea cupcake.
Bake at 375 degrees for 20-25 minutes until tops are just starting turning golden brown.
Watch carefully...undercooked or overcooked these aren't as good!
