Original recipe makes 4 Servings
INGREDIENTS A
30 gbutter
2 tbspflour
2 tbspcream
250 mlmilk
INGREDIENTS B
3 largepotatoes; cooked in boiling water till soft then mashed - cooled
200 gcrab meat
1 cansweet corn
1 onion, optional; chopped
salt and pepper to taste
INGREDIENTS C
1 egg; beaten
flour and panko for coating

Crab and Corn Croquette Preparation

1. Melt butter in a frying pan, then add the flour, stir until well mixed. Then slowly add the milk a little at a time and stir till lump free. Add cream.

2. Add ingredients B and mix well. Leave to cool.

3. When mixture is finally cool, shape into cutlets and coat in flour. Then dip into beaten egg and finally coat with panko.

4. As the ingredients are more or less cooked, you do not need to deep fry the croquettes. Just shallow fry till golden brown and dish out.
