Mandarin Orange Cakes Preparation
Combine eggs, yellow cake mix, and mandarin oranges and beat for 2 minutes on high speed. Then beat for 1 minute on low speed. Grease and flour 3 (9-inch) cake pans. Pour batter evenly between all 3 cake pans. Bake at 350 degrees in oven on middle rack for 20 to 25 minutes. Remove from oven and cool in pans for 10 minutes. Remove from pans and cool cakes completely.
Combine crushed pineapple, whipped topping, and vanilla pudding mix in bowl and beat for 2 minutes on medium speed. Let stand for 5 minutes. When cakes are cooled, frost the 3 layer cake. Chill frosted cake for 2 hours in refrigerator before serving.
