Original recipe makes 12 Servings
3 tablespoonVegetable oil
3 cupsOnion; chopped
1/2 teaspoonCayenne
2 poundStew meat
1 poundGround Venison
2 tablespoonChili powder
3 1/2 teaspoonCumin
1 teaspoonCrushed red pepper
3 teaspoonOregano
2 tablespoonGarlic; chopped
3 can (28 oz)Diced tomatoes
1 can (4 oz)Tomato paste
2 cupsBeef broth
2 can (16 oz)Kidney beans; drained and rinsed

NANA'S CHILI Preparation

- Heat oil in large dutch oven

- when hot add Onion and saute for 3-5 min

- Season witrh salt and cayenne pepper

- Stir in stew-meat and Vensison, chili powder, cumin, crushed red pepper and oregano.

- Brown meat for 5-7 min

- Stir in garlic tomatoes, tomato paste, beef stock, and beans

- Bring the liquid to boil and simmer uncovered for 15 min

- Cover and simmer for 45 more min

Notes

increase the cayenne by 1/2 t. for HOT chili

only 1/4 t. for mild
