These are good.
Stir together flour, oat bran, brown sugar, baking soda, salt, nutmeg and cinnamon. Set aside. In small bowl combine buttermilk, egg whites and oil. Add to dry ingredients. Stir til just moist. Stir in apple. May store batter in refrigerator up to 5 days. To bake, spoon about 1/4 cup into each muffin tin and bake in 375F oven for 18-20 minutes
