Chicken breasts stuffed with spinach and feta, rolled up and steamed
~Wash spinach in cold water and transfer to large saucepan. Cover and cook over medium heat until the spinach is just wilted. Transfer the spinach to a colander to drain and cool. When cool enough to handle, finely chop and set aside.
~Rinse out saucepan and place over medium-low heat. Add the oil, garlic and shallots; sauté for 4 minutes, or until shallots are soft. (Do not let the garlic brown.) Add the spinach and sauté for 2 minutes.
~Transfer the mixture to a large bowl. Add the rosemary, bread crumbs, feta and egg substitute; mix well. (If the mixture does not hold together, add more bread crumbs.)
~Place each piece of chicken between two sheets of wax paper. Pound with a mallet or heavy cleaver until the meat is about 1/4" thick. Be careful not to tear the flesh. Set aside.
~Spread equal amounts of filling on each of the four breasts. Carefully roll up each breast to enclose the filling. Secure with toothpicks, if necessary.
~In a large saucepan, bring 1" of water to a boil. Set each chicken roll on a small piece of parchment paper or foil, then transfer to a steaming rack. Set the rack in the saucepan. Cover and steam for 15-18 minutes, or until the chicken is no longer pink when tested with a sharp knife.
