Original recipe makes 8 Servings
1/2 poundItalian sausage (mild)
4 ouncesSliced mushrooms
1 largeCarrot,; shredded
1/2 cupSliced green onions
4 Eggs,; beaten
1/4 cupMilk
1/2 teaspoonSalt
1/2 teaspoonPepper
3 cupsCooked rice
1/4 cupGrated parmesan

Italian Brunch Rice Preparation

Cook sausage in a large skillet over medium heat until browned. Drain; return meat to skillet. Add mushrooms, carrot, and onions; cook 2 minutes.

Combine eggs, milk, salt and pepper in a small bowl. Reduce heat to medium; pour egg mixture over vegetables. Cook, stirring, about 2 minutes. Add rice and cheese, stirring to separate grains. Heat 2 minutes.

Notes

Serve immediately.
