3 mediumZucchini
1/4 cupegg substitute
2 tablespoonItalian dressing; - reduced fat
1/2 cupBreadcrumbs; - dry
2 tablespoonParmesan cheese
1/8 teaspoonGround pepper

Baked Zucchini Chips Preparation

Cut zucchini into 1/4 inch thick slices. Combine egg substitute and Italian dressing in a small bowl and set aside. Combine breadcrumbs, Parmesan cheese and pepper in a small bowl and set aside. Dip zucchini into egg mixture then dredge through breadcrumb mixture and place on a baking sheet sprayed with nonstick cooking spray. Bake at 475 degrees for 5 minutes per side or until browned and crispy.

475 allows for great crispness! Take spatula to them right away, post oven, or they will stick to the pan! Too good for that!

Have made these quite a few times and they are always popular. I used an egg instead of egg substitute.
