| Leftover roasted chicken; 1/2 chicken |
| 2 Golden delicious apples; peeled and thinly sliced |
| 3 stalksCelery; thinly sliced |
| 1/2 cupWalnuts; toasted and coarsely chopped |
Chicken Salad with Apples and Walnuts Preparation
In a large bowl, whisk together mayonnaise, lemon juice, salt and pepper. Remove skin from half of leftover chicken. Shred meat and add to dressing. Add peeled apples, celery stalks and walnuts. Serve over a bed of lettuce.
