Tartare thon (tuna)
110 grTuna; (Red tuna)
2 mlAsian sesame oil
5 mlOlive oil
3 mlRice vinegar
3 mlGinger; Zested
1 Avocado
50 mlCream; 35%
3 mlWasabi
10 mlLime juice
1/4 sheetSeaweed; Chopped
10 mlSesame seeds
Salt and pepper
Tartare saumon (salmon)
110 grSmoked salmon
25 mlDijon mustard
15 mlHoney
5 mlOlive oil
15 mlChives
Salt and pepper
Roquet salad; For decoration

SauThon tartare (Salmon & Tuna tartare) Preparation

Tartare Thon (Tuna)

1. Couper le tartare en petits cubes. Mélanger avec l'huile d'olive, l'huile de sésame, le vinaigre de riz, le gingembre, le wasabi et le jus de lime.

2. Ensuite émiétter la feuille de nori. Ajouter la moitier au mélange (le reste servira pour la décoration). Ajouter les graines de sésame, sel et poivre.

3. Mousse d'avocat (servira de lit au tartare de thon). Mettre l'avocat en puré et faire fouetter la crème séparément, ensuite mélanger tranquilement.

4. Avec un moule (boîte de conserve), mettre environ 1 cm d'épaisseur de la mousse d'avocat et 2 cm de thon. Presser légèrement, démouler.

Tartare Saumon (Salmon)

1. Mélanger tous les ingrédients sauf la roquette (servira de lit au tartare de saumon).

2. Avec un moule (boîte de conserve), mettre environ 1 cm d'épaisseur de roquette et 2 cm du mélange de saumon. Presser légèrement, démouler.
