| Cranberry Salsa |
| 1 bagfresh cranberries |
| 1 smallonion; diced |
| 1-2 Tfresh cilantro or cilantro paste |
| 1 smalljalapeno pepper; seeded and diced |
| .25 Csugar |
| 1-2 splashOJ |
| Goat Cheese Quesadilla |
| 12 largeflour tortillas |
| 1 bagshredded jack/cheddar cheese |
| 1 containergoat cheese |
Cranberry Salsa with Goat Cheese Quesadilla Preparation
mix all salsa ingredients together in a blender or food processor. Refrigerate overnight.
Spread goat cheese on one tortilla, cover with some jack/cheddar cheese, top with a second tortilla. Heat in dry pan, until cheese melts, flip and heat on the other side. let cool and cut into 8 wedges.
Serve goat cheese chips with salsa.
