Cranberry Salsa with Goat Cheese Quesadilla Preparation
mix all salsa ingredients together in a blender or food processor. Refrigerate overnight.
Spread goat cheese on one tortilla, cover with some jack/cheddar cheese, top with a second tortilla. Heat in dry pan, until cheese melts, flip and heat on the other side. let cool and cut into 8 wedges.
Serve goat cheese chips with salsa.
