Original recipe makes 8 Servings
Lemon Blueberry Coffee Cake (Light) Preparation
In a bowl, combine the egg, sugar, lemon peel and milk; mix well. Stir in the biscuit mix just until moistened. Fold in blueberries. Pour into a greased 9' round baking pan.
Bake 350 degrees 25-30 mins. or until done in the center.
Cool 10 mins. before removing from pan to a wire rack. Combine confectioners' sugar and lemon juice until smooth; drizzle over warm cake. Cut into wedges.
