One of many recipes for this magical drink from the world of Harry Potter. This is purpoted to be the closest to that served at The Wizarding World of Harry Potter theme park in Orlando.

"Ever since my first trip to Universal I've been searching for the recipe for that magical concoction know as Butterbeer. This is the closest to the original I've found. Note that you really should have the cream soda COLD!! Also I added 1/4 tsp. butter flavoring to the topping. It is a bit sweet, but still the best I've been able to create at home. Kudos to whoever came up with this. Its great!"

1 cuplight or dark brown sugar
2 tablespoonswater
6 tablespoonsbutter
1/2 teaspoonsalt
3/4 cupheavy cream; divided
1/2 teaspoonrum extract
1/2 teaspooncider vinegar
48 ouncescream soda

Butterbeer Preparation

In a small saucepan over medium, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240 F on a candy thermometer.

Stir in the butter, salt, vinegar and 1/4 heavy cream. Set aside to cool to room temperature.

Once the mixture has cooled, stir in the rum extract.

In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.

To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.

I am never making this again because in my opinion it tastes awful. For one thing it is way too sweet and Im 16 and normally like sweet things. My mom took a sip of it and she also hates it(then again she doesnt like most sweet things. My dad hasnt tried it yet but im pretty sure he wont like it. My brotheer might though he likes alot of things that the rest of my family thinks is too sweet.

Kids love it cuz it tastes just like the Universal Studios grog; I like it cuz it ain't $11.50 a pop...it is a darn near perfect imitation, though.

My sister hosted a harry potter themed party for her lil girl... This was a hit and she used the same recipe... She served it hot though...
