|1/2 poundGreen beans; cut into 1 inch sections|
|2 c.Cauliflower florets|
|1 c.Baby tomatoes; halved|
|1 15 oz. canGarbanzo beans; rinsed and drained well|
|1 canBlack olives|
|1/2 c.Sun-dried tomatoes; diced|
|1/4 to 1/2 c.Sun-dried tomato dressing; or regular Italian dressing|
|Salt, Pepper, Onion and Garlic powder; to taste|
Italian Marinated Bean Salad Preparation
1) Place green beans and cauliflower in a pot with 1/2 c. water and simmer 5 minutes or till crisp tender. Drain well rinsing under very cold water.
2) Meanwhile, toss the tomatoes, garbanzo beans, olives, and sun-dried tomatoes in a large bowl. Add the beans, cauliflower, and dressing. Toss lightly to coat everything. Add salt, pepper, onion and garlic powder to taste.
3) It can be served immediately at room temp if desired, but chilling for a few hours to overnight is best.
