Heat oven to 350F. Grease & flour bottoms only of two 8x4-inch loaf
pans. In small bowl, soak oats in hot water for 5 minutes. In large
bowl, cream butter and brown sugar until fluffy. Add oat mixture, sour
cream, orange peel and eff; blend well. Lightly spoon flour into
measuring cup; level off. Add flour, baking powder, baking soda, salt
and cinnamon; blend well. Fold in cranberries & walnuts. Spoon 1/2
batter evenly into each prepared pan. Bake @ 350F, for 55 to 65
minutes or until toothpick inserted in center comes out clean. Cool 15
minutes; remove from pans. Cool completely. Wrap tightly and store in
fridge.
