1/2 cupfat free liquid egg substitute
1/4 cupground beef style soy crumbles
1/4 cupshredded fat free cheddar cheese
1 teaspoondry taco seasoning
3 tablespoonssalsa
1 tablespoonfat free sour cream

Mexi-licious smothered taco scramble 168 Preparation

Bring a pan sprayed with nonstick spray to medium heat. Add egg substitute and sprinkle with taco seasoning. Scramble until solid bits begin to form. Next add soy crumbles and scramble until fully cooked.

Remove from heat and transfer to a micro safe plate. Sprinkle with cheese and micro for 25 to 30 seconds, until cheese has melted. Smother with salsa and sour cream
