Hearty Lentil Soup with Hot Italian Sausage & Spinach

Original recipe makes 6 Servings
1 largeonion; finely diced, about 2 cups
3 carrots; peeled and diced, about 1 cup
2-2 ribscelery; diced, about 1 cup
3 tablespoonsolive oil
2-3 hot Italian chicken sausages; about 3/4 pound
1 1/3 cupslentils; rinsed and picked over
6 cupshomemade chicken broth
2 cupswater
1 tablespoonbalsamic vinegar
salt
1/2 teaspoonfreshly ground black pepper
2 cupsbaby spinach

Hearty Lentil Soup with Hot Italian Sausage & Spinach Preparation

In a heavy bottom 5 quart pot over medium heat, heat the oil and sauté onions, carrots and celery until softened but not browned, about 7-10 minutes. Add the sausages and break them up with spoon. Saute for three minutes until browned.

Add the lentils and stir to coat well. Heat for 1-2 minutes. Add chicken broth and water and bring to a boil. Reduce heat to medium low and simmer for at least 60 minutes, or up to 90 minutes, or until lentils are soft and tender throughout.

When the lentils are just right, add tomato paste, vinegar and pepper and stir thoroughly. Taste for salt, adding as needed. Turn off heat and add spinach, stirring until completely wilted.

Serve in wide, shallow bowls and garnish with croutons and shaved parmigiano-reggiano cheese. Goes great with a nice piece of crusty bread. Makes 8 starter or 6 entrees servings.

Notes

    It was good. I added bell peppers instead of celery. Would be a great soup for those cold winter days.

    This was so yummy. I added yellow bell peppers instead of carrots and celery and the flavor was amazing.

    Very easy to make and cheap as it fed 5 of us. Mixed reaction, all was eaten but I found it rather bland and the celery over powered it. Sausages were delicious but I think it needed a bit more lick.
