Chicken & Broccoli Casserole
Original recipe makes 8 Servings
| 1/4 cupButter |
| 1/4 cupGreen onion; sliced |
| 1 4 ounce packageProsciutto; thinly sliced |
| 1 14 ounce packageFrozen broccoli florets; thawed & drained |
| 1/2 cupChicken broth |
| 2 cupsCooked chicken; chopped |
| 1 10.75 ounce canCream of chicken soup |
| 1 cupSour cream |
| 2 cupsMozzarella cheese; shredded |
| 1/4 teaspoonGround mustard |
| 1/4 teaspoonGround black pepper |
| 4 cupsPenne noodles; hot cooked |
| 1 cupPanko |
| 2 tablespoonButter; melted |
Chicken & Broccoli Casserole Preparation
Preheat oven to 350. Lightly grease a 3 quart baking dish.
In a large skillet, melt butter over medium heat. ADd green onion and prosciutto; cook 5 to 6 minutes, stirring occassionally or until prosciutto is crispy. Add broccoli and chicken broth; cook 5 minutes, stirring frequently. Remove from heat. Stir in chivcken, soup, sour cream, cheese, mustard, and pepper. Add noodles, tossing gently to coat. Spoon into prepared baking dishes.
In a small bowl, combine panko & melted butter; sprinkle evenly over casserole.
Bake 30 minutes.
